Why Tequila Food Pairing Works
The diverse world of tequila, from bright blancos to aged añejos, offers an incredible range of flavors that complement different foods. Learning how to make the right food pairings means that you need to understand a few basic rules.
Matching Intensity
A good rule of thumb is to match the intensity of your tequila with the intensity of your food. For instance, a light herbaceous Blanco tequila pairs beautifully with delicate seafood, while a robust añejo can hold its own against a juicy ribeye steak.
Complementing Flavors
Like wine, tequila displays a variety of tasting notes that can either contrast or complement the flavors in your meal. Think citrusy notes from the agave, earthy undertones, or spice from aging in oak barrels. Look for those natural bridges between your tequila and your dish.
Regional Pairings
Let's not forget the rich culinary traditions of Mexico, where tequila originates. Authentic Mexican dishes, with their vibrant flavors and spice, naturally lend themselves to tequila pairing.

Blanco Tequila Pairings
With its vibrant agave flavors and citrusy notes, blanco tequila shines alongside:
- Seafood Dishes: Think ceviche with its bright acidity, fresh oysters, or grilled fish tacos.
- Salads: A blanco tequila can cut through the richness of creamy dressings or fatty proteins.
- Spicy Food: The tequila's peppery notes play off the heat of dishes like aguachile or spicy tuna rolls.
Reposado Tequila Pairings
Aged for a few months in oak barrels, reposado tequilas develop a lovely complexity with hints of vanilla, caramel, and spice. This makes them perfect for pairing with:
- Grilled Meats: Chicken, pork, and lighter steak dishes are all fair game.
- Mexican Dishes: Consider classics like mole poblano (especially when paired with a Hornitos Black Barrel ) or carnitas.
- Roasted Vegetables: The sweetness of roasted vegetables plays nicely off the caramel notes of a reposado.
Añejo Tequila Pairings
Añejo tequila, aged for at least one year, boasts rich, sophisticated flavors with notes of oak, chocolate, and dried fruit. These tequilas can handle some of the boldest flavors:
| Añejo Tequila Pairings | Why This Pairing Works |
|---|---|
| Ribeye Steak: It's a classic pairing for a reason. | The rich, fatty flavors of the steak complement the oak and spice of the tequila. |
| Grilled Octopus | As Javelle Taft, head bartender of Death & Co in New York, points out, the smoky flavors of grilled octopus complement with traditional, smoky añejo tequilas. |
| Chocolate Desserts: Think dark chocolate truffles, flourless chocolate cake, or even a simple square of high-quality dark chocolate (greater than 70% cocoa). | The chocolate profiles found in añejo tequilas pair well with many different types of chocolate desserts. |
Creative Tequila Pairings: Think Outside the Bottle
While the traditional pairings are delightful, don't be afraid to get a little creative and adventurous.
- Biltong and Blanco: According to Forbes, this pairing of biltong, South African dried meat, and blanco tequila is surprisingly delicious, especially for the health-conscious.
- Kentucky Fried Chicken and Añejo: Yes, you read that right. Paul Sauter, bar director of The Aviary and The Office in Chicago, suggests this unexpected combination for a surprisingly satisfying experience.
- Bananas and Blanco: Matt Carter, The chef and restaurant owner, shares this tip for adding sweetness to an otherwise bitey tequila experience.
