High-Quality Yeast for Home Champagne Production
So you have decided to try your hand at making Champagne
The Champagne region is approximately 15... More. That's awesome. But before you get started, you’ll need to choose the best high-quality yeast
Wine yeast is a microorganism essential ... More for home Champagne production. Champagne yeast is a crucial ingredient in the Champagne-making process, as it's responsible for converting sugar into alcohol and carbon dioxide. This process, known as fermentation, gives Champagne its signature bubbles and flavor.
There are many different strains of Champagne yeast available on the market, but this article will highlight some of the best options. We'll discuss each yeast strain's specific characteristics, fermentation profiles, and ideal uses to simplify choosing the perfect yeast strain for your homemade bubbly.
Understanding Champagne Yeast
Selecting the proper wine yeast strain for your homemade Champagne is paramount for achieving the desired characteristics in your final product. A firm grasp of this process will make choosing the right strain of Champagne yeast significantly less challenging.
The Significance of Yeast Strains in Champagne
While natural yeasts might be present on the grapes, Champagne production usually employs commercial yeast for consistency and predictability. Each Champagne yeast strain comes with its own set of characteristics.
These characteristics directly influence the wine’s fermentation during the wine making process. They also influence the flavor profiles and the bubble structure of your Champagne. For example, some sparkling wine yeast strains will produce a more neutral flavor profile than others, while some are known for their high alcohol tolerance. Choosing the best yeast for Champagne depends largely on the style of sparkling wine you’re hoping to achieve.
What Makes Champagne Yeast Special?
The history of Champagne itself dates back to the first century when grapes were first planted in that region of France ( The History of Champagne World History ). It was originally called “the wine of France” until the name was changed.
Only sparkling wines produced in the Champagne region of France can be labeled, “Champagne” (What Is Champagne Organic Facts). While any yeast can convert sugar to alcohol, what makes Champagne yeast special is its ability to handle the high-pressure conditions unique to the secondary fermentation in a bottle.
The secondary fermentation is where carbon dioxide gets trapped in the wine, resulting in the “bubbly” texture so coveted in this type of beverage. Baker’s yeast, which makes bread rise, can’t withstand the harsh environments of champagne making. For best results, select a yeast specifically crafted for this style of wine( Baker’s Yeast vs Champagne Yeast ).

Making the Right Yeast Choice
When choosing the best yeast for Champagne or sparkling wines, you should consider factors like alcohol tolerance, fermentation temperature, and whether your yeast needs specific nutrient additions. Here is what to think about when choosing your yeast.
Alcohol Tolerance: Setting Your Yeast Up For Success
Yeast strains all come with specific alcohol tolerances, impacting their fermentation abilities and flavor contributions. Opting for a high-alcohol-tolerant yeast, such as the best yeast for champagne, Lalvin EC-1118, (which tolerates up to 18% ABV

This is particularly true for beverages with higher alcohol content. It ensures a complete and successful fermentation. Matching wine yeast with your target ABV is a good idea because this yeast can produce off-flavors if your ABV is too low.
Temperature: The Importance of Finding Balance
Temperature directly influences fermentation success by impacting the yeast's metabolism and activity level. While many yeasts prefer similar temperature ranges, Lalvin EC-1118 has the largest effective fermentation temperature range of 10-30°C (50-86°F).
This wide range makes it one of the more beginner-friendly options (Lalvin EC-1118).
Nutrient Requirements: Ensuring a Smooth and Efficient Fermentation
Like us, wine yeasts require a nutrient-rich environment to thrive. Providing your yeast with appropriate nutrient supplements such as nitrogen, vitamins, and minerals ensures vigorous fermentation. Winemakers can provide these extra nutrients by incorporating yeast nutrients into their process.
This will further optimize the process and promote yeast health. It ensures consistent and efficient conversion of sugar into alcohol and other desirable byproducts.
Beyond Champagne: Alternative Applications of Yeast
Champagne yeast, particularly strains known for their clean profiles like Lalvin EC-1118, proves useful beyond just sparkling winemaking.
Yeast Versatility: From Ciders to Fruit Wines and Beyond
Champagne yeast can be used to create an array of fermented beverages. They excel at bringing out the layered flavors in ciders. Lalvin EC-1118 is one of the best yeasts for champagne but it can also be used to brew a crisp
Crisp wines come from several key grape ... More, clean-tasting hard cider, too.

FAQs about High-Quality Yeast for Home Champagne Production
What yeast makes the most bubbles in Champagne?
While all Champagne yeast will produce carbon dioxide (which makes bubbles.), one variety that is known for producing an abundance of fine bubbles is Lalvin 71B-1122. This particular strain, (also called Prise de Mousse) is often used in traditional méthode champenoise sparkling wines. This wine yeast strain is a popular choice for Champagne.
Is Brewer’s yeast the same as champagne yeast?
The answer to this question is, "sort of". Brewer’s yeast and Champagne yeast are strains of the same species (Saccharomyces cerevisiae), but have been cultivated for different purposes. Champagne yeast is a strain of wine yeast that is tolerant of high alcohol content.
It can also withstand high pressure and sulfur, making it ideal for sparkling wines like Champagne. The sugar content of champagne can vary.
Can you use any yeast to make champagne?
While technically any yeast will begin the fermentation process, we don't recommend using just "any" yeast. For best (and safest.) results, use a yeast variety designed for Champagne or sparkling wine. This will provide the best chance of a successful batch.
