Tastings are private, so that means reservations are required for a visit. However, it also means youโll get to sit down with owner and winemaker Bill Canihan as he explains his organic wine-making process. In addition, the tasting takes place in an outdoor country-style setting, making it feel laid back and welcoming.
The wines found at Canihan Winery are a testament to both the terroir and Bill Canihanโs winemaking process. His organic management processes like dry-farming, cane-pruning shows his attention to detail. They also hand harvest the fruit to ensure grapes are at their peak ripeness. When it comes to production time, he uses naturally occurring native yeast, which all combine to create his elegant wines, including Cabernet Franc, Pinot Noir, Rose, Syrah/Shiraz, and Viognier.
